Add 2 tablespoons of olive oil in a pan and let it heat on medium flame.
Add cumin seeds and mustard seeds to the oil.
Add chopped onions and a pinch of turmeric powder and fry them for 2 minutes on a medium flame.
Add ginger and garlic paste and further cook for a minute or two.
Add chopped tomatoes and garam masala and let it cook for 5 minutes.
Add salt and red chilli powder (to taste) and cook for 2 more minutes.
Add a pinch of sugar(splenda will do) to the curry and let it cook for another minute.
Garnish it with some cilantro and the curry is ready to be served.
