Mamma'a Jambalaya

This is my Mom's Jambalaya. It'll rock your socks off.

  Recipe Ingredients

Cooking oil 
2 white onions 
1 bell pepper 
1 package of hot sausage 
2 bay leaves 
1/2 tsp cayenne pepper 
1 tsp salt 
3 cups uncooked rice 
2 - 8oz cans tomato sauce 
peeled shrimp (no limit here) 
4 cups water 
1/2 clove garlic

Prepare

Chop onions and bell pepper. Slice hot sausage links 1/2" thick. Rinse the rice to get rid of the starch. Peel yo shrimps.



Saute the goods

Pour cooking oil into a skillet - enough to saute onions. Saute until onions are soft (slightly clear). Add sausage and saute 5-8 minutes. Add shrimp and saute until light pink. Add salt and pepper and mix.



Simmer it down

Add bell pepper, garlic, bay leaves, rice, tomato sauce and water to saute pot. Cover and cook over medium heat for 20 minutes. Stir with a fork during cooking so that the rice won't get sticky.

If it's cooking too fast add more water or tomato sauce.
